It’s Revolution Time again – the jubilee edition!

On September 4th and 5th 2022 the fifth edition of Chefs (R)Evolution will take place. After a two-years break, due to Covid, we are delighted to be back with THE anniversary edition of the Dutch festival for avant-garde Cuisine: ‘Chefs (R)Evolution’!

Just like the previous editions this culinary festival will be organized by Jonnie and Therese Boer at restaurant De Librije and around theater De Spiegel in Zwolle. Together with the team of Librije and in collaboration with Thomas & Carola Ruhl and the team of Port Culinaire, this festival will make the gastronomic delights easily accessible for everyone. Again Chefs (R)Evolution will host top international chefs  who are going to give impressive cooking demonstrations, a wine & food pairing palace will be provided by the top restaurants of the Netherlands, spectacular cooking competitions, special wine workshops and last but not least the BOERenmarket XL.

The first five chefs
During the interactive cooking demonstrations a selection of the best chefs of the world will present their skills and abilities. Like previous years Hans Steenbergen, trendwatcher/ chief editor of Food Inspiration, will be presenting this cuisine festival.

We are proud to announce the first names who will be giving a live demonstration on stage in theatre De Spiegel:

  • Norbert Niederkofler, St. Hubertus, San Cassiano, Italy. (Nr. 58 World’s 100 Best, 3 Michelin stars).
  • Lukas Mraz, restaurant Mraz & Sohn, Vienna, Austria. (2 Michelin stars)
  • Mateu Casañas, Oriol Castro & Eduard Xatruch, Disfrutar, Barcelona, Spain. (Nr. 5 World’s 100 Best, 2 Michelin stars)
  • Rasmus Munk, Alchemist, Copenhagen, Denmark (Nr. 54 World’s 100 Best, 2 Michelin stars)

BOERenmarkt XL
At the BOERenmarket XL visitors can discover the variaty of artisan farmers and (wine)suppliers of Jonnie and Thérèse Boer. In cooperation with Alliance Gastronomique a diversity of dishes from the entirety of the Netherlands will be served. Our wine partners will serve a matching glass of wine. The most unique part: every restaurant will bring it’s own farmer. The public will be introduced in an easily accessible manner to our beautiful Dutch products and ingredients, the beautiful and fair products served with matching wines.

Unique cooking competitions
Just like the previous editions of Chefs (R)Evolution there will be organized unique cooking competitions, for example the HillBilly Contest. The candidates are to be invited by the organisation. In previous editions, the team excisted of a chef and an assistant. This addition, a third member will be added. This time, the chef can bring a maître or sommelier to serve an accompanying drink. The candidates receive a map of the region and visit places marked by Jonnie Boer. At these locations they collect various ingredients which they use in their menu’s and proudly present to the jury. This international jury existst of Jonnie Boer (De Librije***), Joël Broekaert (NRC) and previous winner Estée Strooker.

Wine & Food Pairing Palace
On Sunday as well as Monday restaurant De Librije will be transformed into a wine & food pairing palace. On both days a 6-course lunch will be served by ten different chefs who have previously worked at De Librije themselves. Each of the chefs will serve 1 dish and an accompanying wine. Colleagues such as Sydney Schutte (Spectrum**), Adrian Zarzo (Zarzo*) and Jeroen Achtien (Restaurant Sens**) will be present to give you a taste of their kitchen. Naturally De Librije will also make a dish, as one of the 6 courses.

  • The price of a day-ticket is €79,95 pro person, including access to the BOERenmarket XL
  • A combination ticket costs €129,95, including access to the BOERenmarket XL
  • The entrance price for BOERenmarket XL is €12,50 pro person per day
    (including a welcome drink and an exclusive Chefs (R)Evolution glass)

For students of gastronomic studies a special rate has been created:

  • A dayticket is €49,95 (instead of €79,95) including access to BOERenmarket for €12,50
